Recipe / Goat Cheese Quiche
I am convinced that quiche is one of the most delicious foods on the planet. It’s also practically impossible to mess up. This particular quiche recipe turned out so well that it disappeared in twenty minutes! Enjoy! Makes one 9 inch quiche.
Pie crust (either use a pre-made pie crust, or make your own.)
3 large eggs
1 and 1/8 cups whole milk
1 and 1/8 cups heavy cream
½ teaspoon salt
Black pepper, to taste
½ teaspoon grated lemon zest
1 teaspoon chopped fresh thyme
2 tablespoons chopped scallions
4 ounces goat cheese, sliced into 1/4-inch rounds
Place the pie crust in a 9 inch pie pan. Bake at 375 degrees for 15-20 minutes, or until toasted and lightly brown.
While the pie crust is in the oven, prepare the ingredients. Grate the lemon zest and chop the thyme and scallions. To make the custard, beat the eggs in a mixing bowl. Whisk in the milk, cream, salt, pepper, lemon zest, thyme, scallions, and parsley. Stir well and set aside.
Spread goat cheese slices evenly over baked pastry crust, then beat the custard mixture once more and pour it carefully over into the pie pan. Bake at 375 degrees for 30-35 minutes; the quiche is done when golden and set. Allow to cool for ten minutes, and enjoy at either room temperature or cool.
